Nutritionist Ana Luson stated that cooking pasta to an al dente state allows for maximum benefits to be extracted. She suggested this method in a conversation with HuffPost.

According to Luson, boiling pasta to an al dente state reduces its glycemic index. This method of preparation is especially beneficial for people with insulin resistance, she explained.

The specialist added that it is also important to pay attention to what is eaten with the pasta. If a person adds a good source of protein, healthy fats, or plant-based fiber, then blood glucose levels will remain stable regardless of how the pasta was prepared. Furthermore, if a person does not like al dente pasta but eats it, the stress from striving for perfect nutrition will harm the body more than a temporary change in blood sugar levels, Luson concluded.
