The Highlight of Finnish Cuisine: How to Make Fish Soup "Lohikeitto" (RECIPE)

In every culture where people know how to and love to fish, there is its own interpretation of fish soup. Among Finns, a people whose fate has always been closely tied to the sea, there are many recipes for fish soups!

 

Fish soup "Lohikeitto" with cream, a festive version of a dish beloved by Finns, is rightly considered the highlight of Finnish cuisine. Fortunately, recipes are available to everyone nowadays, and you and your loved ones can appreciate why this soup is so valued by gourmets!

As mentioned, the cream version of "Lohikeitto" is a festive variant of this dish. However, the traditional version also includes dairy products. The everyday version is called "Kalakeitto," in which milk is used instead of cream. Nevertheless, we will start with the crown jewel version!

Ingredients

head, trimmings, and fillet of any red fish
2.5 l water
500 g potatoes
200 g leek
400 ml cream
0.5 tsp sugar
a bunch of dill
2 bay leaves
salt
butter
allspice
black peppercorns

Preparation

1. Cut the fish fillet into large cubes, add half a teaspoon of sugar and the same amount of salt, and let it brine while the broth is cooking.

2. Place the head and trimmings of the fish in a pot, cover with cold water, add salt, a few black peppercorns, and a little allspice. Bring to a boil, then simmer for 30–40 minutes over medium heat, periodically skimming off the foam. Strain the finished broth.

3. In a separate pot, melt a piece of butter, add the sliced leek, and sauté for 2–3 minutes, then pour in the strained broth. After that, add the diced potatoes and bay leaf.

4. Bring the contents of the pot to a boil and cook until the potatoes are ready, which usually takes about 15 minutes. When the potatoes are ready, add the cream. Bring to a boil again, then add the fish and cook for exactly one minute. Finally, add the dill, keep it on the heat for another half a minute, and remove the pot from the stove.

5. That's it, the Finnish soup "Lohikeitto" is ready. Before serving, be sure to let it sit for at least 20 minutes. We recommend adding a little chopped dill to each bowl.
