In this recipe, oat flour is used instead of wheat flour. It has a significantly lower glycemic index, which prevents sharp spikes in insulin levels in the blood, as occurs after consuming products made from wheat flour. Additionally, oat flour is rich in fiber and is a slowly digestible carbohydrate, which will provide you with a feeling of fullness until lunch.

Instead of sugar, we use bananas. This is an excellent substitute for white sugar in cooking. Yes, bananas are sweet too, but thanks to the fiber they contain, they do not cause a sharp increase in blood glucose levels. Therefore, the feeling of satiety will last much longer.

To prepare airy pancakes, you will need:

2 bananas
1 egg
oat flour
a pinch of baking soda
oil for frying

If you prefer to cook without oil, use a non-stick frying pan. In this case, the pancakes will resemble pancakes in texture and appearance.

So, thoroughly mash the bananas, add the egg, baking soda, and flour. The most beneficial is oat flour made from flakes using a coffee grinder, but regular store-bought flour will also work. After mixing all the ingredients, let the batter sit for 5 minutes to swell a bit. Aim for a more liquid consistency. Pour the batter onto the heated oil or onto a dry frying pan — whichever is more convenient for you.
