How to Properly Fry Meat and Fish

1. Use only refined oil for frying. The amount should be about 8% of the product's weight. It is also important that the frying pan has a thick bottom.

2. For quality frying, the meat should be dried with paper towels. Excess moisture creates steam, which slows down the frying process and the formation of a crust.

3. Cook the meat just before serving. Do not salt it before frying, as this can lead to loss of juice. It is better to sprinkle with salt a few minutes before finishing frying to achieve a crispy crust. Powdered sugar can be used for browning.

4. To achieve a golden crust from breadcrumbs, first dip the meat or fish in beaten egg, and then in breadcrumbs.

5. Do not flip the meat too often during frying.

6. To tenderize meat from older animals, use a marinade. If you are short on time, you can spread mustard on it. Additionally, you can pound the meat with a kitchen mallet and drizzle with lemon juice.
