Dietitian Mikhail Ginzburg warned that excessive consumption of potatoes can lead to diabetes, obesity, atherosclerosis, and hypertension. According to him, this vegetable contains a lot of fast carbohydrates, so one should not get carried away with it.
“Starchy foods, such as potatoes, are divided into two categories: those with slow and fast carbohydrates. The main difference lies in the speed of starch breakdown in these products and how quickly glucose is absorbed. Slow carbohydrates break down gradually, which is beneficial for the body. In contrast, fast breakdown leads to a sharp influx of glucose, negatively affecting metabolic processes and potentially contributing to the development of diabetes,” explained the specialist.
Additionally, the dietitian shared tips for potato lovers on how to reduce health risks. First, Ginzburg recommends limiting the amount of this vegetable in the diet, and second, consuming it cold.
“Cold, then reheated potatoes contain more resistant starch, which breaks down slowly or not at all,” added the doctor.
Third, it is better to boil potatoes in their skins to prevent them from falling apart. Fourth, one should avoid fluffy varieties, as they contain little fiber. Fifth, it is recommended to always combine potatoes with greens and vegetables, as they slow down the breakdown and absorption of carbohydrates.
