Why are the cake and candies called “Bird's Milk”?

Can birds give milk?

 

All birds are oviparous, not mammals. Thus, there is no such thing as bird's milk in nature, and of course, it is not an ingredient in the candies. Therefore, the term “bird's milk” has come to symbolize something unusual and impossible.

As for the cake, it was created by Polish confectioners who first released a batch of surprisingly delicious soufflé in a chocolate shell in 1936. They chose this name for their dessert to attract the attention of sweet lovers.

In the USSR, the soufflé “Bird's Milk” appeared in the 1960s and quickly gained popularity. Ten years later, Soviet confectioners developed a recipe for a cake with the same name, based on the famous soufflé, which has a rather simple composition: a mixture of egg whites, sugar, gelatin, and butter, covered in chocolate.
