Appetizing carrot cake in the shape of a horseshoe — beautiful and symbolic.
According to beliefs, a horseshoe brings good luck. We suggest making a cake in this shape: it not only looks impressive but also turns out incredibly delicious.
Ingredients (for 10 servings)
- 10 eggs
- 350 g sugar
- a pinch of salt
- a pinch of ground cinnamon
- 450 g grated carrots
- 150 g ground hazelnuts
- 150 g ground almonds
- 200 g flour
- 1 packet of baking powder
- 450 g white chocolate
- 250 g butter
- 600 g cream cheese
- 2 tbsp berry syrup

Preparation
Dough
- Separate the eggs into whites and yolks. Place the whites in the refrigerator.
- Whip the yolks with sugar, salt, and ground cinnamon. Add the grated carrots and mix.
- Combine the hazelnuts with the almonds, flour, and baking powder, then add to the carrot mixture.
- Whip the egg whites into a stiff foam and gently fold into the carrot mixture.
- Pour the batter into the horseshoe mold and bake at 180°C for about 50 minutes. Allow to cool, then cut into 2 layers.
Soaking
- Lightly soak the bottom layer with berry syrup.
Cream
- Break the white chocolate and melt it together with the butter. Allow to cool.
- Combine the melted chocolate with the cream cheese.
- Spread the cream on the layers, top, and sides of the cake.
Decoration and Serving
- Optionally decorate with confectionery elements.
- Refrigerate until serving.
