Ingredients:
300 g pasta (spaghetti or fettuccine is recommended);
200 g salmon fillet (fresh or lightly salted);
2 medium tomatoes;
1 small bunch of fresh basil;
2 cloves of garlic;
50 ml olive oil;
salt, ground black pepper — to taste;
parmesan (optional) for serving.
Preparation:
Cut the salmon fillet into small pieces. Pour boiling water over the tomatoes, remove the skin, and dice them. Mince the garlic. Finely chop the basil.
In a large pot, bring water to a boil and add salt. Cook the pasta according to the package instructions until al dente. Drain the water, reserving a little for the sauce.
In a deep skillet, heat the olive oil over medium heat. Sauté the garlic until golden. Then add the pieces of salmon and fry for 2-3 minutes, after which add the tomatoes.
Simmer everything together for another 5 minutes. Season with salt and pepper to taste.
Add the pasta to the skillet with the salmon and tomatoes, gently mix over low heat to ensure the pasta is evenly coated with the sauce. If the sauce is too thick, add a little reserved pasta water.
