Did carrots originally have a purple color?

Yes.

- In the East, dark purple (or black) carrots were common, while in Europe, yellow varieties were found. The way we see this root vegetable today is the result of breeders' work, - notes botanist Svetlana CHAIKOVSKAYA. - Through numerous crossings of purple, yellow, and other types of carrots from various regions, breeders were able to achieve the orange color. This carrot lost some of its essential oils, which made it sweeter.

In addition to improved taste characteristics, orange carrots are easier to grow. This explains their popularity in stores.
