Lagman is a classic dish that first emerged in the expanses of Eastern and Central Asia. It is a harmonious combination of fresh vegetables, meat (most often beef), aromatic spices, and long strips of thinly rolled dough. There are many variations of this dish, including vegetarian and seafood options, making it versatile and suitable for various taste preferences.

How to Prepare: Traditional Recipe

Ingredients:

300 g of beef (or other meat of your choice)
1 large onion
2-3 carrots
2-3 bell peppers of different colors
2-3 tomatoes
2-3 cloves of garlic
200 g of long dough (or noodles)
Various spices: turmeric, black cumin, cinnamon, etc.
Salt and pepper to taste
Baking powder (optional)

Preparation:

1. Cut the meat into thin strips and fry over medium heat until golden brown. Then remove the meat and set it aside.

2. In the same pan, sauté the chopped onion until soft, then add the chopped carrots and peppers. Continue cooking until the vegetables are soft.

3. Add the chopped tomatoes and garlic. Mash the tomatoes with a fork and simmer for a few minutes until a sauce forms.

4. Return the fried meat to the pan, add spices, salt, and pepper. Sauté for a few more minutes.

5. Add the prepared dough (or noodles) to the pan. Mix all the ingredients to distribute the dough evenly.

6. Pour hot water or broth into the pan to cover the ingredients. Press down the dough and cook over medium heat until done (about 10-15 minutes).

7. Serve the lagman hot, sprinkled with fresh herbs and spices to taste.

Vegan Lagman with Tofu

For vegans, you can replace the meat with marinated firm tofu and use vegetable broth. This will add a protein component and variety of textures to the dish.

Seafood and Shrimp Variation

Add seafood such as shrimp or squid to the meat or cottage cheese to give the dish a marine aroma and flavor.

This dish immerses you in a world of Eastern flavors and aromas. Each variation is unique and reflects the richness of culinary traditions. Preparing lagman is like a journey through the culinary traditions of the East, where each bite offers true gastronomic delight.
