Vegetable Pilaf: Lean Recipe

This dish is prepared without the addition of meat.

 

Vegetable pilaf is a nutritious and healthy dish, perfectly suitable for fasting. It is made exclusively without meat. You can choose rice to your liking, and you will also need onion, carrot, bell pepper, tomatoes, garlic, and spices.

Ingredients:

rice 1 cup
water 2 cups
onion 1 pc.
carrot 1 pc.
bell pepper 1 pc.
fresh tomatoes 2 pcs.
garlic 3 cloves
black pepper ground
turmeric 1 tsp.
salt
vegetable oil

Preparation:

1. Peel the onion and carrot. Remove the seeds from the bell pepper. Cut the onion into small cubes, the carrot and pepper into long strips, and the tomatoes into pieces.

2. Rinse the rice thoroughly under running water.

3. In a heavy-bottomed pot, lightly fry the carrot and onion in vegetable oil. Then add the pepper and tomatoes. Season with salt, add black pepper and turmeric. Stir and fry for another two minutes. Evenly sprinkle the rice over the vegetables. Insert the garlic and carefully pour hot water along the side of the pot.

4. Simmer covered on low heat until the rice is cooked, about 10-15 minutes. Remove from heat and let the pilaf sit covered for 15 minutes. Before serving, stir the dish.

Tips:

* Optionally, add canned green peas or corn.

* You can use a heavy-bottomed frying pan to prepare the pilaf.
