The Nutritionist Explained How to Choose Grains Properly

Endocrinologist-nutritionist Antonina Gureeva shared tips for choosing quality grains.

In the diet of every person who takes their nutrition seriously, grains should be present daily.

However, to maximize their benefits, it is important to choose them correctly.

When buying rice, pay attention to its color. It should be uniform. If there are yellow grains in the package, this may indicate improper storage conditions; likely, the rice was stored in a high-humidity environment.

“Make sure that there are minimal broken grains in the package. More transparent grains will be fluffier after cooking,” notes the expert.

Buckwheat is one of the healthiest grains. Prefer grains that are light brown in color, and all grains should be of the same shade.

Also, check that there are as few broken and crushed grains as possible, as well as debris, in the package.

Semolina is often used for baby food, so it is important to choose it carefully. Before purchasing, shake the package and inspect it closely for bugs or debris.

Prefer grade M — it usually has a white or barely noticeable cream shade. This type of grain becomes softer and more tender when cooked.

Grade T semolina has a more yellow color and is harder. Sometimes manufacturers mix different grades.

Barley is also a source of beneficial nutrients. Choose packages with grains of approximately the same size and try to avoid dark grains.

When buying pearl barley, pay attention not only to the color (it should be yellow-gray) but also to the absence of impurities. There should be no lumps in the package.
