Eggs Stuffed with Spinach: A Recipe for a Bright and Quick Spring Snack

Stuffed eggs are popular all over the world, and in such a bright version, everyone will definitely want to try them.

 

With the arrival of spring, there is a desire to prepare simple and light dishes. A quick and easy egg treat will be a wonderful addition to the festive table. This is reported by the Shuba website.

Ingredients:

chicken eggs - 5 pcs.
spinach - 100 g
mayonnaise 72% - 60 g
lemon juice - 1 tbsp
salt and black ground pepper - to taste
refined sunflower oil - 1 tbsp

Method of Preparation

1. First, boil the eggs hard, cool them in ice water, and carefully peel them. Then cut the eggs in half and separate the yolks into a separate bowl.

2. Next, rinse the spinach leaves and cut off the stems. Heat a frying pan, add a spoonful of vegetable oil, place the spinach in it, and cook over medium heat until it becomes soft.
If using frozen spinach, allow it to thaw, then bring it to a boil in the pan.

3. Drain the excess liquid from the spinach, add it to the bowl with the yolks, then add mayonnaise and thoroughly mash the mixture with a fork or blend it with an immersion blender.

4. Don’t forget to season with salt and pepper to taste.

5. Fill the halves of the boiled egg whites with the prepared filling using a spoon or a pastry bag.

6. You can garnish the snack with spinach leaves.
