In the homeland of pineapples, hardly anyone would think of baking this fruit with dairy products. Nevertheless, we once decided to experiment and found that these ingredients complement each other perfectly.
Ingredients for 8 servings
3 eggs
3 tbsp sugar
750 g cottage cheese
3 tbsp semolina
zest of 1 lemon
1/4 tsp vanilla sugar
200 g canned pineapples
1 tbsp butter
2 tbsp raisins
2 tbsp breadcrumbs
canned cherries for decoration
Preparation:
Step 1
Separate one yolk from the egg. Whip the egg whites and the remaining eggs with sugar until foamy.
Step 2
Soak the raisins in boiling water for 10 minutes. Then drain them in a sieve to remove excess water. Mix the cottage cheese with semolina, crushed lemon zest, vanilla sugar, and raisins. Pour in the whipped eggs with sugar and mix thoroughly.
Step 3
Place pineapple slices and cherries at the bottom of a round baking dish greased with butter and sprinkled with breadcrumbs. Evenly distribute the cottage cheese mixture on top. Whip the remaining yolk and brush it over the surface of the casserole. Bake at 180 °C for 40 minutes.
Helpful Tip
The combination of exotic fruits with dairy products is a delicate topic. Many people’s bodies do not accept this combination the same way they do not accept milk with cucumbers. Although fermented dairy products differ from regular milk, be cautious. In our experience, mango and cottage cheese pair wonderfully (as confirmed by Indians who traditionally mix mango with yogurt in sweet lassi); cottage cheese and bananas are also good together. However, we strongly advise against adding kiwi to the casserole, even for decoration, to avoid potential issues.
