Ingredients:

kefir — 500 ml;
eggs — 3 pcs;
flour — 150 g;
salt — 1/2 tsp;
baking soda — 1/2 tsp;
sugar — 1 tbsp;
oil — 2 tbsp.

Preparation:

1. Whisk the eggs with a whisk until foamy. Then add the kefir and mix thoroughly. In a separate bowl, combine the flour, baking soda, and a pinch of salt.

2. Gradually introduce the dry ingredients into the liquid ones, mixing thoroughly to avoid lumps.

3. Pour in the oil and mix well again.

4. Make sure the eggs and kefir are at room temperature, and it’s better to sift the flour beforehand.

5. The result should be a homogeneous batter. Let it rest for 15 minutes. Bake the pancakes on a well-heated pan greased with vegetable oil. Spread the batter in a thin layer and fry over medium heat until golden brown. Periodically grease the pan with vegetable oil, and the finished pancakes with butter.

Kefir pancakes can be served with a variety of fillings: honey, jam, fresh berries, butter, and much more. You can also add various ingredients to the batter, such as berries, fruits, nuts, or chocolate, to give them a unique flavor.
