What to Cook on March 8? Three Original Salads

March 8 is a day when men strive to please their beloved women. They organize festive dinners, prepare interesting salads and desserts, and also bake fish or prepare seafood appetizers.

 

In such a situation, even if you don’t cook often, you will need ideas for quick meal preparation. A festive dinner should not be complicated; otherwise, it will be difficult to enjoy the celebration itself. We offer recipes for simple and delicious festive salads, hot dishes, and desserts.

Hearty Salad with Chicken and Vegetables

1 baked or smoked chicken breast
1 medium cucumber (or half a long one)
1 small can of canned corn
1 fresh carrot
2-3 leaves of Chinese cabbage
2-3 leaves of green lettuce
Salt and pepper
Mayonnaise

Step 1. Cut the chicken into strips.

Step 2. Drain the liquid from the can of corn and add the kernels to the chicken.

Step 3. Peel the cucumber and cut it into strips.

Step 4. Peel the carrot, slice it into thin rounds, and then into strips.

Step 5. Cut the Chinese cabbage into strips.

Step 6. Mix all the chopped ingredients, season with salt and pepper, and dress with mayonnaise.

Step 7. Roughly chop the lettuce leaves, sprinkle them on top of the dish, and garnish with thin cucumber slices.

Pomelo and Fried Shrimp Salad

½ pomelo
200 g peeled tiger shrimp (tails can be left on)
1 avocado
Two handfuls of any salad greens
1 handful of spinach
1 tbsp odorless vegetable oil
10 g butter
A pinch of sweet paprika

For the dressing:

2 tbsp olive oil
70 ml orange juice (can be squeezed from half an orange)
1 tbsp lime or lemon juice
Salt and black pepper.

Step 1. Peel the pomelo, cut the segments crosswise into strips about a centimeter thick, and carefully extract the pulp. Pomelo is convenient to use due to its large segments, but it can be replaced with grapefruit or orange.

Step 2. Heat a pan, pour in the vegetable oil, and add a piece of butter. Fry the shrimp with a sprig of thyme.

Step 3. Place the shrimp on a paper towel and sprinkle with sweet paprika.

Step 4. Allow the shrimp to cool and cut them into large pieces.

Step 5. Cut the avocado in half, remove the pit, scoop out the flesh with a spoon, and cut it into large pieces.

Step 6. Roughly chop the salad and spinach leaves, and mix them with the avocado.

Step 7. In a bowl, whisk together the orange juice, a bit of vegetable oil, a spoonful of lime or lemon juice, and add salt and pepper. Dress the salad.

Step 8. Top with pieces of pomelo, and place the shrimp on the salad; they can be left whole if they are small. Large shrimp can be cut into two to four pieces.

Chicken and Grape Salad

½ chicken breast (can buy 1 baked from the store)
150 g seedless grapes
1 yellow bell pepper
70 g grated hard cheese
2 eggs
1 tbsp lemon juice
1/2 tsp Dijon mustard
2 tbsp Greek yogurt
Salt and black pepper
Salad leaves for serving

Step 1. Boil the eggs hard, then place them in cold water and peel.

Step 2. Season the chicken with salt and pepper, drizzle with olive oil, wrap in foil, and bake in the oven. Alternatively, it can be fried in a pan.

Step 3. Pat the chicken dry with a paper towel to remove excess fat, and cut it into small cubes (about the size of grapes).

Step 4. Cut the pepper into small cubes.

Step 5. Cut the eggs into cubes, mix with the chicken, pepper, and add the grapes (previously washed and dried).

Step 6. Mix the yogurt with lemon juice and mustard, season with salt and pepper. Dress the salad and place it on a plate lined with salad leaves.
