Can't Take My Eyes Off: Sour Cream Fruit Pie Recipe

What could be more delicious than a homemade sweet pie? Only a sour cream pie.

 

If you miss the summer days and want to treat yourself to something especially delicious and hearty, take a look at this recipe. It beautifully combines fruity freshness with the rich taste of cottage cheese. You can choose fruits at your discretion; it is not necessary to stick to those specified in the recipe. These can be either fresh seasonal fruits or exotic ones, such as oranges, tangerines, or kiwis.

To bake the sour cream pie, you will need to prepare three main components.

1. Dough recipe:

Flour – 200 g

Butter – 100 g

Egg – 1 pc.

Salt – 0.5 tsp.

Sugar – 1 tbsp.

2. Cream recipe:

Sour cream – 350 g

20% cream – 200 ml

Cornstarch – 50 g

Sugar – 120 g

Eggs – 3 pcs.

3. Fruit filling recipe:

Plum, blackberry, currant (or other fruits) – 400 g

Sugar – 50 g

Cornstarch – 20 g

Water – 40 ml

Let's start preparing the dough:

Mix salt, sugar, and flour. Add pieces of butter and rub them into the flour. Beat in the egg and knead the dough. Place the finished dough in the refrigerator for 30 minutes to cool.

Preparing the fruit filling:

Place the frozen berries of blackberry, currant, and plum in a pan, add sugar, and stew. After a few minutes, add the cornstarch. Wait for the fruit mixture to thicken, stirring occasionally.

Preparing the cream:

Whisk three eggs with sugar. Then add sour cream and cornstarch with cream. After that, take the dough out of the refrigerator and roll it into a basket shape. Don’t forget to poke holes in the dough with a fork. Pour in the resulting mixture and the fruit filling. Carefully create patterns using a thin culinary stick or a table utensil and place it in the oven.

Bake for 35 minutes at 180 degrees.
