Why Many Children Dislike Broccoli?

Adults often avoid broccoli due to its taste, which may be linked to unpleasant childhood memories. But what lies behind children's aversion to this vegetable?

 

Recent studies show that certain bacteria in saliva can make broccoli extremely unpleasant in taste for some children. The enzymes contained in this vegetable interact with bacteria in the oral cavity, which, according to specialists, leads to the formation of an unpleasant sulfurous smell.

In the oral cavity, bacteria release enzymes known as cysteine lyases. These enzymes are also present in the cells of several vegetables. When chewing broccoli, the amount of these enzymes increases, and they break down a compound called S-methyl-L-cysteine sulfoxide, resulting in the formation of sharp sulfurous odors.

Previously conducted studies have shown that in adults, the level of this enzyme varies, so this time the scientists focused on children.

The experiment involved 98 pairs of parents and children aged 6 to 8 years. The researchers collected saliva samples from each participant and mixed them with a cauliflower powder prepared in the laboratory. They then measured the amount of S-methyl-L-cysteine sulfoxide derivatives. As in previous studies, it was found that the saliva of each participant released different amounts of unpleasant sulfurous odors.

But why do children dislike broccoli more than adults? The authors of the study believe that the aversion to this vegetable is formed in childhood. As a person grows up, they either get used to its taste or refuse to consume it. This is why children tend to maintain a negative attitude towards broccoli more often.

Interestingly, during the study, the scientists found that the formation of "smelly compounds" in parents and their children coincided. This indicates that relatives may have similar microflora.
