How to Surprise Guests at the New Year's Celebration: Table Ideas

According to the Chinese calendar, the year 2024 will be the Year of the Green Wooden Dragon, symbolizing change and new beginnings. In the East, this image is associated with wisdom, strength, and self-confidence, as well as wealth and abundance. We offer you one of the interesting recipes for the New Year's table.

 

Stuffed Eggs “Dragon Eye”

This appetizer, easy to prepare yet incredibly tasty, will be a great addition to the festive table. They can be served as a separate dish or used to decorate salads, sandwiches, tartlets, and jellied dishes. For the filling, you can mash the yolk with a fork and mix it with mayonnaise, and also add some cheese.

To prepare 16 pieces you will need:

eggs – 8 pcs.
hard cheese – 100 g
mayonnaise – 2–3 tbsp.
freshly ground black pepper
salt

For decoration:

lettuce leaves
olives
cucumber

First, boil the eggs hard, then cool, peel, and cut in half lengthwise. Grate the cheese on a fine grater. Carefully remove the yolk and mix it with the cheese, mayonnaise, salt, and pepper.

Fill the egg white halves with the cheese mixture. Cut the cucumber into thin rounds, and from 16 pieces, use a vegetable knife to cut out the flesh, leaving only the ring of the skin.

Place each ring on the stuffed egg and gently press the filling so that it fits snugly against the cucumber skin.

Cut out pupils from the olives and gently press them into the center of each egg. On a large flat plate, lay out the lettuce leaves, place the stuffed eggs on top, and decorate around with the remaining sliced cucumbers with drops of mayonnaise and pieces of olives.

Hostess Tip: For a variety of flavors, you can add a bit of green onion (only the white part) and a couple of pinches of lemon zest to the filling of the stuffed eggs.

You can also use any canned fish in its own juice for the filling: pink salmon, sockeye salmon, tuna, and others. Just remember to remove the bones, skin, and bright parts that may spoil the color of the filling.
