“Here is an excellent and economical way to prepare marinated garlic (for 500 g, which is about 10-12 heads): 350 ml of water, 20 g of salt, 35 g of sugar, one sprig of dill, a bay leaf, a clove bud, 5 peas each of black and allspice, 50 ml of 9% apple vinegar, and 1 tbsp of beet juice (optional),” lists the ingredients Chef Alexey SULIMA.

Now let's move on to the cooking process. First, bring the water to a boil along with the salt, sugar, dill, clove, bay leaf, and peppercorns. In the meantime, you can peel and rinse the garlic. Once the water boils, remove it from the heat, add the vinegar, and pour it over the garlic in the jar.

If desired, you can add beet juice, which will give the marinated garlic a beautiful pinkish hue. Then close the jar, wait for it to cool, and store it in the refrigerator for 1.5-2 weeks. Marinated garlic is an excellent snack to accompany various dishes such as sausages, meat, lard, and potatoes. However, it is worth remembering that any product loses some of its beneficial properties during heat treatment, so whenever possible, prefer fresh ingredients.”
