- I recommend replacing premium wheat flour with healthier alternatives. The coarser the grind, the more beneficial it is for the body, - says dietitian and nutritionist Olga SHUKH. - Premium flour falls short in this regard, as it has the finest grind. It is produced from the central part of the wheat grain endosperm, where beneficial substances are practically absent. It contains only a high amount of starch and a small amount of protein. Thus, the lower the grade of wheat flour, the more beneficial components it contains, as the microelements and vitamins present in the grain are preserved.

The best choice is flour from a coarse grind, as it contains the necessary vitamins and minerals for the body. Whole grain, bran, and semolina flour take the lead.

In baking, rice, corn, and oat flour can be added instead of premium wheat flour.
