The undressed Olivier salad can be stored in the refrigerator for up to a day, said dietitian Elena Solomatina.
If the New Year's salad is dressed, it should not be stored for long, as this increases the risk of poisoning. The dish is recommended to be eaten on New Year's Eve or in the morning.
“First of all, we do not dress the Olivier salad and place it in the refrigerator. We take exactly as much as we need, dress it, and eat it, while the rest is stored in the refrigerator. It can be stored overnight and the next day; by evening, we should have eaten it,” advised Solomatina.
The dietitian also noted that many start counting the shelf life only after they put the salads in the refrigerator. This is incorrect, as people boil vegetables, leave them on the table all day, and only then cut them. As a result, by morning, such a salad is no longer particularly fresh.
