Herring under a fur coat, crab salad, and Olivier salad have become an important part of the New Year's table. For those who care about their nutrition, Doctor of Medical Sciences, dietitian Margarita Koroleva recommends adapting familiar recipes to make the salads healthier.

 

Margarita Koroleva notes that the main problem with traditional New Year's salads is the use of mayonnaise. This product is not considered healthy but is often present in various dishes.

“The solution is quite simple — make mayonnaise yourself. It’s not that difficult, and to enhance the flavor, you can add different ingredients. Homemade mayonnaise is better prepared in advance, so you’re not rushed at the last minute,” shares the dietitian's opinion.

The doctor explains that store-bought sauces may contain palm oil that has undergone thermal processing. Such a product is “alien” to the body. Additionally, mayonnaise contains a lot of trans fats and salt, which negatively affects the cardiovascular system.

In herring under a fur coat, crab salad, and Olivier salad, you can replace not only mayonnaise but also other components.

“For example, instead of sausage in Olivier, you can use dietary turkey or chicken meat. Crab sticks can be replaced with seafood. Fresh cucumbers can easily substitute for pickled ones, and it’s better to use fresh-frozen green peas rather than canned. Even potatoes can be replaced with Jerusalem artichokes. This option is especially suitable for people with diabetes or insulin resistance,” advises Dr. Koroleva.

She is confident that if you plan the culinary “repertoire” of the New Year's table in advance, you can take into account the wishes of all family members and guests, as well as create healthier dish options. This will help avoid the rush on December 31 and organize a delicious and healthy festive menu.
