Have you tried herring under a 'fox'? If not, be sure to check out our step-by-step recipe and try it out. Interestingly, unlike the classic herring under a fur coat, our version does not include boiled beets! Instead, we added sautéed mushrooms with onions, potatoes, and eggs. As for the 'fox', it is represented by carrots cut into thin strips using a special grater and sautéed in vegetable oil. By the way, you can use more carrots to make the 'fox' really thick and fluffy!
INGREDIENTS
potatoes – 300 g
eggs – 3 pcs.
carrots – 400 g
vegetable oil – 4 tbsp.
onion – 250 g
champignon mushrooms – 250 g
herring fillet – 250 g
mayonnaise – 150 g
salt, freshly ground black pepper – to taste
STEP-BY-STEP RECIPE
Step 1
Prepare all the ingredients for herring under a 'fox'. Thoroughly wash the potatoes with a brush and boil until cooked (about 25–30 minutes). Drain the water and let the root vegetables cool completely. Grate them on a coarse grater.
Step 2
Place the eggs in a pot, cover with cold water, and bring to a boil. Boil for 10 minutes. Then cool under running water and peel. Peel, rinse, and grate the carrot for the 'fox' on a Korean carrot grater.
Step 3
In a large skillet, heat 2 tablespoons of oil. Sauté the carrots over medium heat, stirring constantly, until golden brown. Add a little salt and pepper. Place on paper towels to absorb excess fat.
Step 4
Peel and chop the onion for herring under a 'fox'. Wipe the mushrooms with a damp cloth and chop finely. Sauté them together with the onion in the remaining oil until golden brown. Add salt and pepper. Place on paper towels to absorb excess fat.
Step 5
Cut the herring into small cubes, removing any small bones. Place a 20 cm diameter culinary ring on a large flat plate. Spread the grated potatoes on the bottom and level them out.
Step 6
Layer the herring on top, level it out, and spread mayonnaise over it. Then add a layer of eggs and also spread mayonnaise. Next, distribute the sautéed mushrooms with onions and cover them with mayonnaise. Finish with a layer of 'fox' made from sautéed carrots. Place the salad in the refrigerator for 2 hours. Remove the culinary ring and serve.
