Cooks explained why boiled rice should not be stored for more than a day

The longer rice waits, the more dangerous it becomes.

Rice, along with pasta and potatoes, is one of the most versatile side dishes. It is especially nice that the texture of the grain hardly changes: rice can be taken out of the refrigerator, slightly reheated, or left cold and served immediately with meat, poultry, and fish.

However, this is not recommended. The reason was explained by experts from the publication "Doctor Peter" citing biotechnologist Kashiv Khan.

Why boiled rice is dangerous

After cooking, invisible mold and Bacillus cereus bacteria quickly multiply in rice. According to an article in the journal Foods, the spores of these microorganisms are heat-resistant and, if stored improperly, release toxins that cause diarrhea, vomiting, digestive disorders, and with regular consumption — liver and immune system problems.

How long rice can be stored

The shelf life of rice depends on the conditions. It can be kept:

in a home refrigerator at temperatures up to 4 °C — for 24 hours;
in food establishments — for a maximum of 12 hours;

Rice should be refrigerated within the first 2 hours after cooking. Too large portions can be frozen immediately after boiling.
