Potato tart with caramelized onions and cheese is a dish that combines rich flavor and tender texture. Thinly sliced potatoes become soft and literally melt in your mouth, the sweet onions add depth to the taste, and the mixture of several types of cheese makes the filling especially creamy.

Chef Tom Walton suggests making this tart with fragrant thyme and serving it alongside a fresh salad that adds lightness and refreshes the taste of the dish.

Ingredients

For the Tart

  • 2 onions
  • 2 tbsp olive oil
  • 2 potatoes
  • 3 tbsp butter
  • fresh thyme
  • ½ cup grated cheddar
  • ⅓ cup grated parmesan
  • ½ cup grated mozzarella
  • salt and pepper to taste
  • shortcrust pastry (about 30 cm diameter)
  • 1 egg

For the Salad

  • 1 red onion
  • a handful of parsley leaves
  • juice of one lemon
  • 1 tbsp olive oil
  • salt and pepper to taste

How to Make the Tart

Caramelize the Onions

Heat the olive oil in a saucepan, add the sliced onions and a pinch of salt. Cover and sauté for about 3 minutes, then stir and cook for a few more minutes.

After that, remove the lid and continue cooking for 10–15 minutes until the onions are soft and golden.

Prepare the Filling

Slice the potatoes thinly. Mix them with ¾ of the caramelized onions, butter, thyme leaves, salt, and pepper.

In a separate bowl, combine the three types of cheese — cheddar, parmesan, and mozzarella.

Assemble the Tart

Roll out the shortcrust pastry on a sheet of parchment paper. In the center, place half of the potato mixture, leaving about 3 cm of free edge.

Spread half of the cheese mixture on top, then add the remaining potatoes and cheese. Finish the filling with the remaining caramelized onions.

Fold up the edges of the pastry to form a border and brush them with the beaten egg.

Baking

Transfer the tart to a baking sheet and bake in the oven at 210 °C for about 45–50 minutes, until the pastry is golden and crispy.

Before serving, cut the tart into portion-sized pieces.

Light Salad for the Tart

For a fresh side dish, mix thinly sliced red onion, parsley, lemon juice, olive oil, salt, and pepper. This salad perfectly complements the creamy texture of the tart.
