When Cutlets Get Boring: Juicy Minced Meat Roll with Filling

Cutlets and dumplings are the most familiar minced meat dishes, but sometimes you want to try something new. One simple option is to make a meat roll with a filling of vegetables and boiled eggs. This dish turns out juicy, hearty, and looks impressive even on a festive table.

Ingredients

For the meat base:

  • 750 g minced meat
  • 1 onion
  • 1 egg
  • 1 tsp breadcrumbs
  • 1 tsp ground red pepper
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp salt

For the filling:

  • 1 can of canned vegetables
  • 4 boiled eggs

For the sauce:

  • 2 tbsp vegetable oil
  • 1 tbsp tomato paste
  • 1 tomato (grated)
  • 2 cloves of garlic
  • 1 tsp salt
  • 1/2 cup hot water

Preparing the Meat Base

Peel the onion and grate it finely. In a deep bowl, combine the minced meat, egg, breadcrumbs, salt, cumin, red and black pepper. Add the onion and knead the mixture thoroughly for about five minutes until the minced meat becomes homogeneous and slightly sticky — this will help the roll maintain its shape.

Forming the Roll

Grease a sheet of parchment paper with a small amount of oil and place the minced meat on it. With wet hands, flatten it into a rectangular layer about 1–1.5 cm thick.

In the center, place the canned vegetables, having drained the liquid beforehand. Arrange the boiled eggs in a line on top — this will make the roll look beautiful when sliced.

Lifting the parchment from the edge, carefully roll the minced meat into a tight roll and pinch the edges. Wrap the roll in paper and place it in the refrigerator for about an hour — cooling will help maintain its shape.

Baking

Preheat the oven to 200 °C. Remove the roll from the refrigerator, transfer it to a baking dish, and place it in the oven for about 30 minutes, until the surface begins to brown.

Preparing the Sauce

While the roll is baking, heat the vegetable oil in a pan. Add the tomato paste and heat it for about a minute. Then add the grated tomato, minced garlic, salt, and pour in the hot water. Cook the sauce for about five minutes, stirring, until it thickens slightly.

Final Stage

Remove the roll from the oven and evenly pour the sauce over it. If desired, you can add slices of fresh tomatoes or sweet pepper to the dish. Return the dish to the oven for another 10 minutes.

Before slicing, let the roll rest for 5–7 minutes — this will allow the juices to distribute evenly inside. The meat roll can be served with mashed potatoes, pasta, or a vegetable side dish.
