Turkish flatbread kiyamali pide is a simple and quick option for lazy pizza that does not require much time to prepare. Thin, crispy on the edges, and with a rich meat filling, it is suitable for both a snack and a full meal.
For the filling you will need: 300 g of minced meat (to taste), 150 g of tomatoes, 100 g of sweet red pepper, 100 g of onion, green hot pepper, a couple of cloves of garlic, and one chicken egg. Also, use 20 g of butter, 380 g of wheat flour, 1/5 tsp of dry yeast, 1 tsp of sugar, 250 ml of water, a little black pepper, and salt.
For the dough: mix the sugar, yeast, and water in a deep bowl and let it sit for 20 minutes. Then add the flour, salt, and vegetable oil, knead the dough on a work surface, and leave it in a warm place for 1.5 hours. You can use ready-made dough to save time.
Prepare the filling by mixing the minced meat with finely chopped onion, sweet and hot peppers, tomatoes, and black pepper. Divide the dough into portions, roll them out, and form small 'boats'. Top with the filling and transfer to a baking sheet.
Bake at 200 °C for about 15 minutes until golden brown. The finished kiyamali pide are hearty, aromatic, and perfect for a quick snack or a home-cooked lunch.
