Real Caucasian khachapuri can be made very quickly — in just 15 minutes on a skillet. This method preserves an appetizing crust and makes the cheese inside smooth and stretchy, making them an excellent option for a quick and hearty breakfast.
Ingredients
- Kefir or natural yogurt — 200 ml
- Salt — 0.5 tsp
- Sugar — 0.5 tsp
- Egg for the dough — 1 pc
- Wheat flour — 300 g
- Baking powder — 1 tsp heaping
- Sulguni cheese — 300 g
- Egg for the filling — 1 pc
- Butter — for greasing
Preparation
-
In a bowl, combine slightly warm kefir with salt, sugar, and one egg, and whisk thoroughly. Gradually add the flour with baking powder and knead a soft, slightly sticky dough. Cover with a towel and let it rest for 5 minutes.
-
Grate the sulguni cheese and mix it with the second egg, then form four tight balls.
-
Divide the dough into four parts, round them, and roll each into a small circle. Place a cheese ball in the center, gather the edges into a knot, and press lightly.
-
Roll the resulting pouch with a rolling pin into a flat cake the diameter of the frying pan.
-
Fry on a dry heated skillet for 5 minutes on each side. Immediately brush the finished khachapuri with butter.
These hot flatbreads with stretchy cheese will become your favorite option for a quick homemade snack.
