Ingredients
- Ground beef – 500 g
- Salt – to taste
- Ground black pepper – to taste
- Vegetable oil for frying – 2–3 tbsp.
- Pickled gherkins – 3 pcs.
- Small onion – 1 pc.
- Small tomato – 1 pc. (optional)
- Lettuce leaves – 8–9 pcs.
- Thin lavash – 3 small round or 2 large sheets
- Ketchup – 2–3 tbsp.
- Mayonnaise – 2–3 tbsp.
- Mustard – 1 tsp. or to taste
- Toothpicks or skewers for securing – 9 pcs.
Preparation
-
Form the patties
Transfer the ground beef to a bowl, season with salt and ground black pepper, and knead thoroughly by hand until a homogeneous elastic mass is formed. Divide the meat into nine equal portions, beat each part several times between your palms, and shape into oval thin patties approximately the size of the future pieces of lavash. -
Fry the patties
Heat vegetable oil in a wide skillet and fry the patties over medium heat until golden brown and cooked through — about 3 minutes on each side. Place the cooked patties on a paper towel to absorb excess fat and let them cool slightly. -
Prepare the vegetables and sauce
Cut the gherkins into thin slices, and the onion into half rings or strips. If desired, briefly rinse the onion in cold water to soften its sharpness. Slice the tomato into thin circles or wedges. In a separate bowl, mix ketchup, mayonnaise, and mustard until a smooth sauce is formed. -
Cut the lavash
Cut the small round lavash into three sectors, and the large one into four triangular or rectangular pieces. -
Assemble the mini burgers
On each piece of lavash, place a lettuce leaf, then add a little sauce on top. Add onion, a few slices of gherkin, a slice of tomato if desired, then the meat patty and a bit more sauce. -
Roll up the wraps
Roll the lavash tightly: first, fold the side edges towards the center, then wrap around the filling. Secure the edge with a toothpick or skewer to prevent the wrap from unfolding.
Serving
Serve the finished mini burgers in lavash immediately while the patties are still warm, arranging them on a flat plate or standing them vertically on skewers.
