Prepare classic Austrian pastry filled with aromatic seasonal fruits, raisins, and nuts.

2 Persimmons

60 g Walnuts

50 g Raisins

1 tbsp Flour

1 tbsp Sugar

¼ tsp Ground Cinnamon

250 g Non-yeast Puff Pastry

1 Egg

1 tbsp Water
Preparation

Preheat the oven to 190 °C. Line a baking sheet with parchment paper.

Peel and dice the apple and persimmons into small cubes. Grate the lemon zest using a fine grater.

Chop the nuts coarsely. Mix the fruits with the zest, nuts, raisins, flour, sugar, and cinnamon.

Roll out the dough into a thin rectangular sheet. Leaving a 2–3 cm margin from the edges of the dough, place the filling on one half of the sheet along the narrow side.

Roll the dough into a tight roll, starting from the filling. Pinch the edges. Beat the egg with water using a fork.

Place the roll on the baking sheet seam side down, brush it with the egg, and bake for 35–45 minutes until golden brown.
