Buckwheat Without Boredom: 5 Original Ways to Use Porridge

Is there boiled buckwheat left after dinner? Don't rush to throw it away — you can make delicious and unusual dishes from it that will diversify your diet and save time on cooking.

1. Omelet with Buckwheat

For a hearty breakfast, beat 2–3 eggs, lightly salt them, add the remaining buckwheat, and pour the mixture into a heated pan with oil.

When the omelet cools slightly, you can add cream cheese, ham, or vegetables and roll it up. This breakfast is more nutritious than a regular omelet.

2. Buckwheat Tabbouleh

The classic tabbouleh salad can be adapted by replacing couscous with buckwheat. Chop tomatoes and red onion, add a couple of tablespoons of buckwheat, dress with oil, salt, and your favorite herbs. Quick, fresh, and delicious!

3. Buckwheat Patties

Combine buckwheat with minced meat, add finely chopped onion and one egg, mix thoroughly, and form patties.

They can be fried, steamed, or later simmered in tomato sauce. This is an original version of "hedgehogs" with rice, but without rice.

4. Buckwheat Popcorn

For an unusual snack, dry boiled buckwheat in the oven at 50–70°C until it seems like it hasn't been cooked.

Then heat oil in a heavy-bottomed pot. Be sure to turn off the heat before immersing the buckwheat in the oil! Add the grains in small portions for 1–2 minutes until the grains slightly pop open. Once ready, drain the popcorn on a paper towel to remove excess fat.

5. Buckwheat Casserole

Fry minced meat with onion, garlic, and tomato. In a baking dish, layer buckwheat, then minced meat, another layer of porridge, top with sour cream, and sprinkle with cheese. Bake for 20 minutes in the oven.

Leftovers store well in the refrigerator: just reheat a portion in the microwave, and a tasty lunch or dinner is ready.
