You should not do this, even though the green tint on the top of the carrot does not indicate spoilage or toxicity of the product, explains hygienist Julia MASYUKEVICH.
This is a result of sunlight exposure on the exposed part of the root vegetable, which leads to the production of harmless chlorophyll (the green pigment). However, in the areas where it forms, the concentration of solanine may increase, giving the green part of the carrot a bitter taste.
To get rid of the bitterness, it is recommended to cut off not only the green part of the root vegetable but also a bit more of the flesh around it.
