Simple Rules for Storing Potatoes, Carrots, and Beets in Winter

After harvesting, it is important to provide proper storage conditions, stated agronomist N. Chaplin.

According to the specialist, potatoes should be dug up when the foliage has completely dried and fallen off, while beets and carrots should be harvested last, often after the first frosts have slightly affected the foliage but not damaged the root vegetables. This helps the vegetables prepare for the winter period.

Beets, carrots, and potatoes are stored at temperatures between +2 and +4 °C and at a humidity of 90–95%. In such conditions, it is possible to avoid freezing, rotting, and premature sprouting of the vegetables.

Before storage, the agronomist emphasized that vegetables should not be washed or placed in tightly closed bags. They should be lightly brushed off dirt and thoroughly dried in the shade. It is also not recommended to store healthy and damaged fruits together, as this can spoil the entire harvest.

The optimal storage places are a cellar or an insulated balcony. During severe frosts, vegetables can be covered with blankets or other warm items. If there is no cellar or balcony, it is acceptable to store vegetables in the hallway—in bags made of natural fabric, to prevent them from sweating. In a warm room, the storage period is shortened, so these vegetables should be consumed first.
