Why Add Baking Soda to Peas and Lemon Juice to Rice

Some housewives believe that cooking should be enjoyable and not take much time.

For restaurant chefs, the most valuable resource is time.

Professional cooks do not have the luxury of spending time on routine tasks, so they have developed several tricks to speed up the cooking process.

Baking Soda in Peas

Peas, beans, lentils, and other legumes require a lot of time to cook. However, if you add baking soda at the beginning of the boiling process, the cooking time is reduced significantly. Chefs use about ½ tsp of baking soda for 2 liters of water.

Lemon in Rice

Many housewives end up with sticky porridge instead of fluffy rice. There is a method that can help achieve the desired quality of the dish.

For the first 3 minutes after the water boils, keep the grains on high heat. Then, for the next 20 minutes, reduce to low heat. After that, cover with a lid and let it steam for 15 minutes.

To make the rice snow-white, add 1 tsp of lemon juice or apple cider vinegar during cooking.

Quickly Boil Potatoes

Peel the potatoes and pour boiling water over them (for example, from an electric kettle) and place them on the heat. After that, add 1 tbsp of butter to the pot.

Clear Broth

Many housewives know that foam must be removed from the broth to make it clear and tasty. But sometimes, in a hurry, some forget to do this.

Don't despair. To fix the situation, you can use egg whites. Whisk them slightly and pour them into the pot. Then stir and continue to cook the broth for 5 minutes. The egg whites will attract the foam and settle at the bottom of the pot. After that, just strain the broth.
