From spring to autumn, many summer residents and city dwellers go outdoors to relax and grill meat over an open fire.

 

It is important not only to know what kind of wood is best for grilling kebabs but also to be able to choose the right meat.

The key requirement is freshness; however, sometimes sellers may deceive and sell meat that has been stored for a long time and is unsuitable for kebabs. Even the best marinade will not save such meat.

Signs of Quality Meat

  • The meat does not stick to the hands when touched.
  • When pressed, the indentation in the meat quickly levels out.
  • There is no blood or slime on a good piece of meat.
  • The smell of the meat should be fresh, without sharp unpleasant notes.

Marinade

Marinating quality meat does not require much time or complicated ingredients. Salt, pepper, and onion are sufficient. Herbs can be added if desired.
