Your husband will ask for more! Pork steak recipe in a skillet — simple and delicious

Juicy pork steak is just what you need for dinner: both on weekdays and holidays. Let’s figure out how to cook it so that the meat melts in your mouth, and you don’t have to spend half a day in the kitchen. And all without magical rituals and chef diplomas!

How to choose meat for a steak

Pork is an excellent choice for a hearty dinner: it is rich in protein, B vitamins (especially B12), zinc, and iron. But to make the dish truly delicious, it is important to choose the right meat and follow a couple of tricks in cooking — otherwise, you will end up chewing not a steak, but a shoe sole.

Look for "marbling" — an even layer of fat. This is not about art, but about how beautifully the meat fibers and fat alternate. This will make the steak juicy, and you the hero of the family dinner.

The best choice is pork neck, but you can also use loin, belly, or rib. And remember the main rule: only fresh meat, no freezing!

How to cut meat for a steak

Before cooking, take the steak out of the refrigerator 30 minutes in advance: let it warm up to room temperature. This way it will cook evenly — without surprises like a raw center and a burnt crust. Cut the meat into large pieces across the grain — thickness from 2.5 to 4 cm. Then rinse the meat and dry it with paper towels — as if you are preparing it for a night out. Rub it with salt, ground pepper, and dried herbs, and let it marinate for 10–15 minutes.

Take a skillet with a thick bottom — cast iron or a grill pan. A thick bottom will provide even heating: there won't be a situation where the edges are already burning while the center is still raw.
Heat the skillet over high heat, add vegetable oil.
Place the steak in the skillet. For the first 2–3 minutes, do not touch it — let it "seal" and form a crust.
Flip it with tongs (not a fork — otherwise, the juice will leak out!) and sear the other side for another 2–3 minutes.
Reduce the heat to medium, add butter and crushed garlic cloves. Baste the steak with the melted garlic butter for 2–3 minutes — this will make it more aromatic.
If you want a more well-done steak, wrap it in foil and place it in the oven for 5–7 minutes at 200 degrees. But don’t overdo it — otherwise, instead of melting-in-your-mouth meat, you will get something rubbery.

Secrets of cooking steak

Want the steak to play with new flavors? Add sprigs of fresh rosemary or thyme to the oil — the taste will become even richer, as if you added a drop of Mediterranean sunshine to the dish.

Don’t rush to serve it: let the meat "rest" after frying — either over low heat for another 2–5 minutes or in foil in the oven. Let the steak recover after all the culinary adventures.

What to serve with pork steak

Classic options are like old good friends: they will always help out and won’t let you down. Mashed potatoes, vegetable salad, stewed cabbage, or rice will make excellent companions for your steak.

And if you want something lighter, pair the meat with green vegetables and a mustard or cream-based sauce — the dinner will be both hearty and elegant.

That’s it — a simple recipe for every day that the whole family will enjoy (even those who usually look at meat with suspicion). Bon appétit!
