Chef Elena Landé shared her recipe for beautiful fried onions. The chef aims to teach viewers how to cook delicious dishes from ordinary ingredients, using the experience gained during her culinary training in France.
What are Fried Onions
Fried onions are not a fast food equivalent, not a full-fledged snack, but rather a "seasoning." They can be served as a side dish, but it's better to chop them and use them for garnishing and highlighting texture in other dishes.
"It’s very tasty to mix them into mashed potatoes. Just chop a little. Sprinkle on fish, in salads... there are plenty of uses," noted the chef.
How a Professional Prepares Fried Onions
From the ingredients, Elena Landé chooses:
white onion — 1 piece; water — 2 tbsp; cornstarch — 1 tsp; flour — 2 tbsp; salt, pepper, paprika — to taste; frying oil — 300 ml
First, slice the onion very thinly. If you have a slicer, it will come in handy. Season the vegetable with salt and pepper, add other spices, and mix to ensure everything is evenly distributed among the rings and half-rings. Immediately drain the liquid that has been released, experts from Gastronom.ru recommended.
Pour water over the onions, add flour and cornstarch, and mix again.
Heat the oil and drop in a little onion to check the temperature. Start frying in batches for 5–6 minutes until the oil stops bubbling. Afterward, place the onions on a napkin and let them cool.
Since the onions are deep-fried, they cannot be considered healthy. Assess your capabilities, your well-being, and if there are contraindications, do not indulge in fried foods.
"Yes, it’s frying and flour and all that, but it’s delicious. In winter, anything goes," the chef noted.
