Light, aromatic pastry — galette on cottage cheese dough with zucchini. It is easy to prepare, looks impressive, and is perfect for both a casual dinner and entertaining guests.
Galette on Cottage Cheese Dough with Zucchini

Ingredients
For the dough:
- cottage cheese (soft) — 360 g
- egg — 1 pc
- butter — 50 g
- salt — a pinch
- whole grain flour — 250 g
For the filling:
- zucchini — 150 g
- cream cheese — 360 g
- onion — 1 pc
- garlic — 1 clove
- pepper — to taste

Prepare the dough.
Rub half of the flour with cold butter and salt until crumbly. Add cottage cheese and egg, mix. Gradually add the remaining flour to knead a soft, non-sticky dough.

Divide the dough.
Form a ball and divide it into 4 equal parts. Let the dough rest for 10–15 minutes.

Prepare the filling.
Cut zucchini and onion into thin rounds or half-rings. Finely chop the garlic.

Form the galettes.
Roll each part of the dough into a circle about 3–4 mm thick. Place cream cheese in the center, then top with zucchini and onion. Sprinkle with garlic and pepper. Fold the edges of the dough towards the center, leaving the middle open.

Bake.
Transfer the galettes to a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C for 30–40 minutes until golden brown.

Serve.
Let the finished galettes cool slightly and serve warm.
Tip: Optionally, add herbs or a bit of hard cheese to the filling for a richer taste.
