Potato pancakes with minced meat are a simple and quick option for a hot dish that turns out softer than classic cutlets. Due to the grated potatoes, they remain juicy and hold their shape well during frying. The dish is suitable for a casual lunch or dinner and is served with a garlic and herb sour cream sauce.

500 grams of minced meat;

four medium potatoes;

one large onion;

two eggs and three cloves of garlic;

one tablespoon of sour cream;

Preparation
Peel the potatoes, grate them on a coarse grater, and thoroughly squeeze out the juice. Removing excess liquid is necessary to prevent the mixture from falling apart during frying and to maintain its shape.
Add onion, garlic, minced meat, eggs, and sour cream to the squeezed potatoes, then season with salt and pepper. Gradually mix in the flour until achieving a medium consistency, where the dough does not run but also does not become a dense lump.
Cover the resulting mixture with plastic wrap and let it sit for 15 minutes. After that, heat vegetable oil in a frying pan, shape not too thick patties, and fry them for five minutes on each side until golden brown. While the last batch is cooking, mix sour cream with garlic and finely chopped herbs for the sauce.
