A delicious meatball soup is a true lifesaver on cold days. It cooks quickly, turns out vibrant and hearty, and its broth is clear and rich. This option is perfect for a home dinner when you want something tasty without long preparation.

Ingredients:

  • Potatoes — 900 g
  • Carrots — 2–3 pcs
  • Water — 2–2.5 l
  • Noodles — 2–3 handfuls
  • Salt, pepper, herbs — to taste
  • Vegetable oil — 2 tbsp
  • Minced meat — 400 g
  • Onion — 1 pc

Preparation:

  1. Prepare the meatballs: blend the onion in a blender and mix it with the minced meat, adding salt and pepper. Form medium-sized meatballs.
  2. Cut the potatoes into large pieces and the carrots finely. Place the vegetables in a pot, cover with water, add salt, and cook under a lid until soft.
  3. Carefully add the meatballs to the soup and cook for a few minutes over low heat.
  4. Boil the noodles separately for a minute in boiling water, drain, and add to the soup along with the chopped herbs. Bring to a boil and remove from heat.

The soup turns out aromatic and rich, while the vegetables and meatballs retain their shape. Easy, quick, and incredibly tasty — the perfect option for a family dinner on a cold day.
