Regular oatmeal can easily transform into a striking and hearty dish by adding tomatoes, aromatic herbs, and a poached egg with a tender runny yolk. This breakfast is quick to prepare, requires no complicated techniques, and looks as if it was served in a trendy urban café. A great option for those who want to start the day deliciously and without unnecessary fuss.
Ingredients
- oatmeal — 1 cup
- water — 2 cups
- onion — ½ pc.
- crushed tomatoes — 4 tbsp.
- chicken eggs — 2 pcs.
- butter — 10 g
- hard cheese — 20 g
- vegetable oil — 10 ml
- 5% vinegar — 2 tbsp.
- herb mix (thyme, oregano, basil) — 2 g
- garlic powder — 1 g
- salt — 3 g
- ground black pepper — 1 g
How to Prepare
Finely chop the onion and sauté it in a pot with vegetable oil until translucent, about three minutes. Add the tomatoes, dried garlic, herbs, salt, and pepper, stir, and simmer for another couple of minutes to release the flavors.
Add the oatmeal, pour in boiling water, mix well, and cook on low heat for about ten minutes until the excess liquid evaporates and the porridge becomes creamy.
Meanwhile, prepare the poached eggs. Bring water to a boil, add vinegar, and swirl the water with a spoon to create a vortex. Carefully pour the egg into the center and cook for 2–3 minutes until the white is set and the yolk remains soft. Remove the cooked egg with a slotted spoon and let the water drain.
Add butter to the cooked oatmeal and gently mix. Serve the porridge in a plate, optionally using a cooking ring. Place the poached egg on top, sprinkle with grated cheese, and serve immediately.
Why You Should Try It
This breakfast combines the benefits of oatmeal, the rich flavor of tomatoes, and the delicate texture of a poached egg. It provides a lasting feeling of fullness, looks appetizing, and helps start the day with the right flavor accents.
