5 Quick Dinner Recipes That Can Be Made in 20 Minutes

Weeknight evening: the kids are tired after school, you are tired after work, and you need to create a miracle in the kitchen. You want to eat deliciously, healthily, and without extra effort. These 5 recipes are true lifesavers.

Each dish is prepared in 20 minutes (or less) from simple ingredients that are almost always at home. Suitable for families with children, easily adaptable to tastes. Cook in one pan or on a baking sheet — minimal dishes!

1. Pasta with Chicken and Spinach in Cream Sauce

Boil water for pasta (spaghetti or penne — 300 g). While it boils, cut 400 g of chicken fillet into cubes, sauté in olive oil for 5-7 minutes. Add 2 cloves of garlic (minced), 200 g of fresh spinach leaves, 200 ml of 20% cream, salt, pepper, and a pinch of nutmeg. Simmer for 5 minutes. Drain the pasta, mix with the sauce. Sprinkle with parmesan. Done! Kids love the creamy texture.

2. Shrimp with Vegetables in a Wok

Thaw 300 g of shrimp (or use fresh). Heat a wok or large skillet over high heat with 2 tbsp of oil. Sauté 1 bell pepper (in strips), 1 carrot (in thin slices), 200 g of broccoli (in florets) for 4-5 minutes. Add the shrimp, 3 tbsp of soy sauce, 1 tbsp of honey, 2 cloves of garlic, ginger to taste. Stir-fry for another 4-5 minutes. Serve with rice (can use microwave rice that cooks in 2 minutes). Bright, juicy, and healthy!

3. Chicken Fajitas on a Baking Sheet

Preheat the oven to 220 °C. On a large baking sheet, place 500 g of chicken fillet (in strips), 2 bell peppers (in strips), 1 large onion (in half rings). Drizzle with 3 tbsp of olive oil, sprinkle with paprika, cumin, garlic powder, salt, and pepper. Mix by hand. Bake for 15-18 minutes. Serve in tortillas with salsa, sour cream, and avocado. Everything cooks at the same time — kids can help mix!

4. Creamy Tomato Soup with Tortellini

In a pot, sauté 1 onion and 2 cloves of garlic in oil. Add 400 g of crushed tomatoes in their juice, 500 ml of broth (or water + cube), 300 g of ready tortellini (with cheese or meat). Bring to a boil, cook for 8-10 minutes. Pour in 150 ml of cream, season with salt and pepper, add basil. The soup is ready in 15 minutes! Serve with bread and grated cheese. A warm, cozy dinner is perfect for cold evenings.

5. Salmon with Potatoes and Asparagus on a Baking Sheet

Preheat the oven to 220 °C. On a baking sheet, place 4-5 young potatoes (cut in half), drizzle with oil, salt, and rosemary. Bake for 10 minutes. Add 4 salmon fillets (150 g each), a bunch of asparagus (trim the ends), drizzle with lemon juice, oil, salt, and pepper. Bake for another 10-12 minutes. It turns out a restaurant dish with minimal effort!
