Homemade Nuggets with Cornflakes: Simple Recipe

We couldn't pass by this trendy recipe, especially since it is perfect for meal prep. These nuggets can be made either in the classic way by frying in oil or baked in the oven for a healthier version of the dish.

Ingredients for 5 Servings

  • vegetable oil - 1 tbsp

  • chicken breast fillets - 4 pcs

  • salt - to taste

  • ground black pepper - to taste

  • smoked paprika - to taste

  • flour - 100 g

  • eggs - 2 pcs

  • unglazed cornflakes - 100 g

Preparation:

  • Cut the fillets into small pieces.

  • Mix the flour with salt, pepper, and paprika.

  • Beat the eggs with a fork.

  • Crush the cornflakes into fine crumbs using a blender or mortar.

  • Dredge the chicken pieces in flour, then dip in the egg, and coat with cornflakes.

  • Preheat the oven to 180 °C. Grease a baking sheet with vegetable oil. Place the nuggets on the baking sheet and bake in the preheated oven for 18–20 minutes.

  • For freezing, line a cutting board with parchment paper or plastic wrap, place the nuggets on it, and put them in the freezer for a couple of hours.

  • Transfer the frozen chicken pieces to a zip bag or vacuum seal. Store them in the freezer for no more than 2 months.
