Ingredients:
- Zucchini – 400 g
- Flour – 120 g
- Vegetable oil – 3–4 tbsp
- Eggs – 2 pcs
- Sour cream – 2 tbsp
- Cheese (mozzarella or other) – 120 g
- Pepper – to taste
- Salt – 1/3 tsp
Preparation:
- Wash the zucchini, dry them, and grate on a coarse grater. Squeeze out the excess liquid.
- Grate the cheese on a fine grater and add it to the zucchini. Mix, beat in the eggs, add sour cream, salt, and pepper.
- Sift the flour and combine it with the zucchini mixture. Mix thoroughly until a homogeneous batter forms.
- Preheat the waffle maker and grease with vegetable oil if necessary. Place 2 tbsp of batter into the mold.
- Bake for 3–4 minutes until golden brown. Optionally, serve with sour cream or additional cheese.
