How to Make Onion Pie with Processed Cheese
- Preparing the dough
First, let's make the dough. In a bowl, combine sour cream, softened margarine (or butter), one whole egg, and the egg white from the second egg. Add a pinch of salt and the baking soda, previously quenched with vinegar. Gradually add the flour and knead a soft, elastic dough. To make it easier to roll out and prevent it from sticking to your hands, place it in the refrigerator for at least half an hour.
- Filling
While the dough is resting, let's prepare the filling. It’s better to chill the cheese in the freezer for about 15–20 minutes beforehand — this will make it easier to grate. Grate the chilled cheese on a coarse grater. Peel the onion, finely chop it, and sauté it until golden in a pan with a small amount of vegetable oil. Season with salt and pepper to taste. After cooling, mix the sautéed onion with the grated cheese.
- Forming the pie
Take the dough out of the refrigerator and divide it into two unequal parts: one should be slightly larger than the other. Roll out the larger part and place it in a greased baking dish, forming small edges. Spread the filling evenly over the dough.
Roll out the smaller part of the dough and carefully cover the pie on top. Pinch the edges well to prevent the filling from leaking. Use a fork to make several holes on the surface of the pie — this will help release steam and prevent the dough from puffing up.
- Baking
Brush the top of the pie with the remaining egg yolk — this will give the dish a beautiful golden hue after baking. Place the pie in a preheated oven at 180°C for about an hour. The cooking time depends on your oven's characteristics, so check for doneness with a wooden skewer or toothpick.
- Final touch
Remove the finished pie from the oven and let it cool slightly before serving. The onion pie with processed cheese can be garnished with fresh herbs — dill or parsley, if desired. Serve hot or warm.
Tips
-
If you want to add some zest, try seasoning the filling with a small amount of garlic or your favorite spices, such as Provencal herbs.
-
You can replace the dough with store-bought unsweetened puff pastry or shortcrust pastry if you want to save time.
