These tender and aromatic pumpkin pancakes are quick to prepare and always turn out well. They can be served with honey, sour cream, or sweet sauce — the dish is versatile and suitable for any time of day.

Ingredients:

  • Pumpkin — 600 g
  • Salt — 1/3 tsp
  • Sugar — 1 tbsp
  • Eggs — 2 pcs
  • Flour — 150 g (about 6 heaping tbsp)
  • Baking powder — 0.5 tsp
  • Vegetable oil — for frying
  • Sour cream — for serving

Preparation:

  1. Grate the pumpkin on a fine grater, add salt, egg yolks, and sugar, and mix. Gradually add flour with baking powder and knead the dough.

  2. Whip the egg whites until stiff peaks form and gently fold them into the dough with a spatula to keep the mixture airy.

  3. On a heated skillet with oil, spoon the dough to form pancakes. Fry on both sides until golden brown. Place on a paper towel to remove excess fat.

  4. Serve hot with sour cream, honey, or sweet sauce.
