Scientists from the Latvian State Institute of Wood Chemistry are participating in an international project, in which they are developing a new drink from grape pomace (press cake) in collaboration with researchers from other countries, utilizing the health-beneficial substances contained in it, LETA reports citing information from the Ministry of Education and Science.
Grape pomace is formed during the wine production process. Researchers note that this byproduct still contains bioactive substances capable of influencing metabolism and potentially contributing to health improvement. Currently, Latvian scientists are working on methods for the effective extraction, preservation, and utilization of these substances in food products.
Scientists are analyzing various processing and storage methods to reduce the loss of active compounds. At the same time, the sustainability of the solution and the possibilities for its practical implementation are being evaluated.
The European Union project "Horizon Europe" titled "4Sir2" covers the entire development cycle — from raw materials to finished products, and it involves collaboration between researchers and food industry enterprises. The project is expected to last until 2030, with the first results and product prototypes potentially available in the coming years.
