How to Properly Store Birch Juice?

-- In the refrigerator, fresh birch juice can be stored for an average of up to two days. “This is because the juice contains sugars, and there are many spores of yeast and mold, as well as bacteria in the air that feed on these sugars,” explained botanist Mikhail RUDEVICH. - Therefore, juice without additional processing is a perishable product. Without freezing or canning, it cannot be preserved for a long time.”

According to the expert, during canning, some of the beneficial properties of the juice may be lost; however, this should not be a reason to refrain from preparing this valuable product. After sterilization in a tightly sealed jar, the juice can be stored for up to two years. No preservatives are required, and sugar, citric acid, ginger, and other ingredients are added to enhance the flavor.

Additionally, another way to extend the shelf life of the juice is to ferment it to make kvass. It is believed that in this case, it will not lose its beneficial properties. The recipe is quite simple: pour 3 liters of juice into a glass jar, add one tablespoon of raisins, 200 grams of sugar, and optionally 30 grams of honey, which will give the drink a more pleasant taste and additional health benefits, as well as 10-15 grams of yeast. Then, place the jar in a dark place for a few days until active fermentation is complete. Pour the resulting kvass into bottles, seal them, and store in the refrigerator or cellar.
