Why is bread primarily made from grains rather than seeds of other plants?

In fact, bread or similar products can be made from any raw material rich in starch and containing a certain amount of protein, not necessarily from seeds. There are recipes for bread made from pumpkin seeds, sunflower seeds, sesame seeds, cassava tubers, and other plants. However, the majority of bread in the world is produced from cereal seeds. These seeds contain special proteins called prolamins, which are enriched with the amino acid proline.

In the seeds, these proteins are tightly packed in lipid shells, and when the grain is ground and mixed with water, they unravel into long strands that give the dough elasticity. This is why yeast bread turns out airy and fluffy.

However, it is possible that the dominance of cereal breads has historical roots: among all starchy plants, cereals were the first to be cultivated, and by the time early farmers began to grow other crops, cereals had already undergone certain selection to meet culinary requirements.
